Here’s What To Eat On Busy Mornings
So many options; so little time. But that doesn’t mean you should reach for an unhealthy, sugar-filled granola bar or a glazed donut for your most important meal of the day. Studies show a good breakfast does more than jump-start your metabolism; it also gets your energy going for the day. Try these healthier options.
Peanut Butter Banana Smoothie: Blend 1 frozen banana, 2 tablespoons natural peanut butter, 1 cup soy or almond milk and a few ice cubes.
Homemade Instant Oatmeal: Make your own oatmeal (and pack in Ziplock baggies) using whole rolled oats, cinnamon and mix-ins like raisins and nuts.
Orange Banana Smoothie: Mix 1-1/2 cups fresh-squeezed orange juice, 1 cup strawberries, 1 ripe banana and 1 tablespoon lime juice in a blender until smooth.
Scrambled Eggs With Veggies: You can make good scrambled eggs in the microwave. Beat 2 eggs, throw in a microwave-safe container, add 1 handful of your favorite veggies and a sprinkle of cheese. Zap the mixture for 30 seconds, stir and cook another 30 seconds (or until eggs are solid).
Waffle PBJ-Wich: Prepare 1 whole-grain toaster waffle and slice in half. Spread with 2 tablespoons nut butter and layer 2 to 3 sliced strawberries on top in place of jelly (to cut down on sugar).
