Who knew that there was an entire day dedicated to desserts?! As a firm believer of, “every meal should have a dessert,” I thought that I would try to get more people on my #Team.

White Chocolate Banana Pudding
- 1 (6-ounce) package white chocolate instant pudding mix
- 2 1/2 cups cold milk
- 1 (14-ounce) can sweetened condensed milk
- 1 (16-ounce) container whipped topping
- 2 pounds bananas, sliced
- Cheesecake flavored Candy Oil Drops
- Vanilla wafer cookies, for garnish
Directions
Mix the pudding mix, milk, and sweetened condensed milk and blend well. Mix in candy oil drops into the whipped topping. Add bananas to the pudding mixture Layer the pudding and the wafers, then top with whipped topping. Garnish with a cookie crumbs.
Refrigerate overnight. Serve in individual serving cups.

Caramel Apple Cupcakes
- 2 1/4 cup sifted cake flour
- 1/2 cup sugar
- 3 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup softened butter
- 3 1/4 cup milk
- 8 ounces cream cheese
- 1 1/2 teaspoons vanilla extract
- 4 egg whites
- 1 jar of apple pie filling
- 1 1/4 cup of caramel sauce (reserve a 1/4 teaspoon for the topping of each cupcake)
Directions
Preheat oven to 350 degrees. Sift all dry ingredients and set aside. Then cream butter and sugar, and add vanilla and caramel sauce into butter and sugar mixture. Add dry ingredients to the creamed mixture. Pour in unbeaten egg whites and mix batter. Use a spatula to scrape the sides of the bowl periodically.
Once all wet and dry ingredients are mixed together, fold in the apple pie filling (do not mix).
Place into regular sized cupcake liners and bake for 25 minutes (all ovens vary) check with toothpick. Batter should yield 18 to 24 cupcakes.
Frosting
- 8 oz. Cream Cheese
- 1 stick of butter
- 1 teaspoon of vanilla extract
- 4 1/2 cups of powdered sugar (may need more depending on consistency when adding caramel sauce).
Frosting Directions
Mix together cream cheese, butter and vanilla until smooth. Then add powdered sugar one cup at a time.
Last, add caramel sauce. If needed add more powdered sugar (1/2 cup at a time) to get a firm texture. Drizzle reserved caramel sauce on top.

No-Bake Blueberry Custard Cups
- 4 Tbsp. light butter
- 8 graham cracker squares (2″), crushed & divided
- 2 Tbsp. water
- 1 Tbsp. cornstarch
- 2½ tsp. NECTRESSE™ Natural No Calorie Sweetener
- ¼ tsp. ground cinnamon
- 1 Tbsp. lemon juice
- 2 cups fresh blueberries
- 8 Tbsp. light whipped topping
- 4 custard cups or small mason jars
Directions
Microwave light butter in a small glass bowl for 30 seconds to melt. Add ½ of the crushed graham crackers and toss to coat. Divide the crumb mixture evenly across 4 custard cups. Microwave the cups on high for 1 minute or until set. Let cool.
In a medium glass bowl, whisk together water, cornstarch, NECTRESSE™ Sweetener, cinnamon and lemon juice. Add blueberries and toss to coat. Microwave the mixture on high for 4.5 minutes (or until mixture thickens), stopping to stir every 90 seconds. Remove from the microwave and let cool.
Spoon the blueberry mixture evenly across the 4 custard cups. Cover and chill until ready to serve.
Spoon a generous dollop (approx 2 Tbsp.) of light whipped dairy topping onto each blueberry custard immediately before serving. Then sprinkle with the remaining graham cracker crumbs, dispersing the crumbs evenly across the 4 cups. Enjoy!
